Both of these recipes are from the Lean In 15 Book again. First up was this little beauty. Japanese Chicken Skewers. I think this is probably my second favourite (after the Mighty Duck Noodles). It was so light and fresh and tasty – I loved it.
The chicken was marinaded in soy sauce, honey and ginger (should have garlic too) and then grilled. The salad is made up of baby spinach, cucumber and radishes with a dressing of white wine vinegar and toasted sesame oil. Then a sprinkle of sesame seeds to finish.
Bloody gorgeous and dead quick to make. A real winner.
And then this evening we had Joe’s Oaty Chicken. The chicken was bashed out flat so it would cook quickly and then coated in flour, egg and a mix of ground almonds, oats & paprika. While that was frying in coconut oil I made the salsa which is cucmber, tomato & avocado with a dressing of olive oil and apple cider vinegar (should have been lemon juice but I didn’t have any).
Both of these recipes have been better-sized portions so haven’t felt like a chore to eat. Mark said this one was his favourite of all the Lean In 15 recipes we tried. (I think he forgot the Duck noodles….).
I’ve been really impressed with both books – so many different recipes that are all easy to make and with normal ingredients most of the time. Really worth the price – I’d recommend them.

Nearly there! Another new recipe from Lean in 15 today. Turkey Amazeballs. Firstly, I can now understand why there’s no photograph of this recipe in the book. It looks pretty grim….
See what I mean? I’ve tried to disguise it as best I can with the grated cheese but you can still see the
sick sauce underneath.
Again, this is a half-size portion – seems to be about right for us. The sauce is made from tomatoes, baby spinach, roasted red pepper (from a jar), spring onion and almonds – all whizzed together in a food processor. Which is where the disgusting colour comes from. I think if I did it again, I’d just chop the tomatoes, onions and pepper and cook that in the pan with the meatballs. Then add the spinach later on and maybe top with flaked almonds. The almonds ground into the sauce just made it taste gritty.
I should add that this isn’t supposed to be served with spaghetti – you are supposed to have more greens. But my belly can’t cope with too much veg. As it turns out, it can’t cope with spaghetti very well either… hey ho! Not such a great success this one. But still reasonably tasty and with a few tweaks could be viable.
Following on from the success from my Chocolate & Beetroot cakes I decided to try making Beetroot Brownies. This was a recipe from the Good Food website and contained both dark chocolate AND cocoa powder so sounded like it would be really good.
The recipe was easy to follow and the house smelled amazing while they were cooking. They had to cool in the tin so they were sitting there taunting us. Once they’d cooled down sufficiently we tucked in….. Only to both stop in unison with a look of barely concealed disgust. Not good. Not good at all. Really beetroot-y and a bit of a weird texture. I was SO disappointed! It seemed a real shame to throw them away. Not least because it was my supply of dark chocolate for the whole week gone! However, Mark took them to work today and everybody loved them! He even said they didn’t taste the same a day later. I tried one again but I didn’t like them still. But at least they didn’t go to waste 🙂
The second new recipe was another treat for Joe Wicks AKA #TheBodyCoach. This is from the second Lean in 15 and is Chilli Chicken Gnocchi. I used leftover chicken from yesterday’s roast dinner so it took next to no time to cook. It’s basically chicken, red onion and chilli flakes fried in coconut oil. Cherry tomatoes are added once the chicken is cooked as is a tablespoon of balsamic vinegar and a handful of spinach leaves. The cooked gnocci is then added and the whole lot stirred up together in a warm, comforting jumble of loveliness. Yet again, a tasty, filling and satisfying meal. I honestly can’t recommend his books enough. I’ve used these two books more than most of my cookery books put together! Excellent.
Aaarrrgh! Day 990 – I am running rapidly out of time! Another new recipe for dinner this evening. This is from the first Lean in 15 book (the red one) by Joe Wicks and is called Mighty Duck Noodles.
It.was.amazing. I really hope this one agrees with my tummy as I would definitely eat this again. I used the recipe for one portion between the two of us and as you can see, it was plenty….
This is stir-fried duck with broccoli, spring onions, 5 spice powder and hoisin sauce. Mixed up together with noodles and topped with cucumber batons. It’s like a yummier, lighter, more comforting version of crispy duck. No doubt it’s much healthier too! Definitely a winner this one.
Another day, another new recipe! Again, it’s a recipe from the Lean In 15 book by Joe Wicks AKA #TheBodyCoach. Today we have Hero Korean Pork Stir-fried Rice. A long title for a very, very tasty dinner. The pork strips are marinated in soy sauce and paprika. Then stir-fried along with ginger, garlic, chilli, carrot batons, midget trees and spring onions. The pre-cooked rice is then added and the whole lot mixed up together. I was surprised at just how much I enjoyed this. It’s a stir-fry. Nothing exotic. But it was seriously nice and I will definitely be making it again.
Yet again though, the portion sizes are massive, so be warned. I did about 2/3 recommended portions and this is about a third again of that. So you can see how much there is! Poor Mark had another mountain – all of which went…..
Another two recipes ticked off this evening. Both were from Lean In 15 (second book) by Joe Wicks.
The first was this one. In the book it’s made with Sea Bass but I don’t like fish so this is a butterflied chicken breast. It’s basically a warm salad of tender stem broccoli (Joe’s infamous midget trees), broad beans, peas and courgettes which are mixed with butter, mint & walnuts. The chicken (or sea bass) is grilled and added to the top.
It was really quick to make (15 minutes in fact!) and was really tasty. I didn’t use the full quantities in the book and it was still a bit too much. He really does make massive portions! I’ll definitely make this one again. It was delicious.
The second recipe is Potato salad with Butterflied Chicken (you can see why I made them at the same time!) This is one for Mark for his lunches. It has chicken, eggs, new potatoes and spring onions all mixed up with creme fraiche. It’s to be served with a green salad. This mammoth box is supposed to be one helping! Needless to say, it’s going to be two…..
This was my dinner this evening. Well, actually it was Mark’s. My portion was smaller but messier so I took a photo of his instead!
This is another recipe from Joe Wicks AKA The Body Coach from his second Lean in 15 book. It’s Pork Chop with Feta & Beetroot Salad. It was absolutely delicious. I’ve not tried avocado since we were fed it at primary school after reading the book Avocado Baby and I HATED it. But it was in this recipe so I thought I’d try it. I didn’t love it but I didn’t hate it either and it’s supposed to be really good for you, so I ate it.
Mark was really impressed with it as a meal and actually like the beetroot this time. Good job as we still have loads in the veg patch!
There are a lot of nice sounding recipes in this book and I’m going to be trying out quite a few in the coming days to try and finish my 50 recipe challenge. Not sure I’ll complete it altogether but I’ll give it a good go!
