Day 935 – #33 Try 50 new recipes

IMG_0003What?!  I hear you cry… I know, I have made rice krispie cakes in the past.  Obviously I have.  Not like these though.  I’ve only ever made them by melting chocolate.  Where my colitis has been flaring I’ve completely cut out dairy again (it *really* doesn’t agree with me!).  I’ve basically been living on rice krispies and soup and rice (not together) which isn’t much fun.  To keep my energy up I wanted something more interesting that I could do with the rice aspect.  And I desperately wanted something “nice”.  So I started googling rice krispies, as you do.

Up popped this recipe for “Old School” krispie cakes like you used to get at school.  Ignoring the fact that our school made them with cornflakes, I thought I’d give it a whirl.  Needless to say it’s a very, very simple recipe and can be found here:

These were lovely and definitely reminiscent of the cakes we had at school.  When (not if!) I make these again I’m going to add a lot more cocoa powder, just to make them that little bit more chocolatey and probably a bit less cereal as I think I spread it a bit thinly.  But even as they were – they were fantastic and cheered me up no end.  Happy days!
